Vegan Baking: Banana Bread!

As I mentioned before, I really enjoy baking. A lot of vegan ingredients are expensive though so lately I've had to keep to using mix and adding my own little spins on it. This afternoon I made vegan banana bread! I'm really excited about it.

A little back story though - I hate bananas. HATEEEEE bananas. But ever since... I want to say February I've been craving them. Well, strawberry-banana things. It's so odd. I guess my body really needs potassium but it's all I've been wanting for months!

I can't have eggs, so I had to go with Ener-G Egg Replacer. The bread calls for the Simply Organic Banana Bread Mix, two eggs (which is about 2/3 of a tablespoon of Ener-G powder and four tablespoons of warm milk), 3/4 a cup of warm water, and two medium sized ripe bananas. It recommends a 9" x 4" pan but mine was 9" x 5" so that's fine too!

Mix the batter and the "eggs" together first, and then add in the water and mashed bananas as shown below. I like using ice cream scoopers when I smash fruits because the curvature allows me to really crush the fruit, and duelly I am able to scoop the fruit once it's been mashed up.

Once you get a nice smooth batter, you're ready to do. I use a spoon although I'm sure a mixer or blender would be a lot easier, hehe. I used my spoon to smash the bananas more but I also left some chunky so I could really taste it in my bread. I'm also a big fan of cinnamon, so I added about half of 1/2 teaspoon of cinnamon to my mix.

The pan needs to be slightly greased and I recommend some vegan flour sprinkled after that, but as I didn't have any, I just used Earth Balance's plain vegan butter to grease up the pan. About that much of a tablespoon.

Looks great now! Into the oven! 50-60 minutes for most ovens on 350 degrees. May need more depending and should cool for about five minutes before serving, according to the instructions. My bread took about 70 to cook fully.

Viola! Delicious :) The cinnamon really gave it a nice aroma and kick.

Vegans Like Pancakes

Good afternoon! This morning Oscar and I decided to embark on a bit of a culinary journey - vegan-friendly pancakes! He's not a vegan but he's been asking me to make something for him that we can share, so hey - breakfast works.

I look odd, hehe :) Yuck the camera adds weight!

Oscar likes my face.

Finished product!

I had a lot of fun making them! I used CherryBrook Kitchen's Original Pancake Mix. They have a lot of other mixes for vegans and many of them are also celiac-friendly (meaning they're gluten-free). Check out their site here!

The little pancakes were also veryyy filling and some vegan butter to sweeten them up made them absolutely delicious :)

Product Review: WholeSoy & Co.

As a vegan, I'm a bit limited in yogurt companies. Sure - endless possibilities elsewhere, but it seems that nobody wants to tackle yogurt these days. I used to be a huge fan of all Silk products. But after accidentally discovering a new vegan-friendly yogurt company because I was tight on money, I'll pass on Silk's yogurts.

I honestly hate bananas and this is my favourite one! One great thing about vegan yogurt in general is that it usually has a bit of a long shelf life - anywhere from a few days to a month and a half.

WholeSoy & Co. is a very light eat but it's filling at the same time. Not only are the yogurts vegan-friendly, but they're all casein/whey/cholesterol free and friendly for celiacs (aka no gluten). The calorie intake depends on which flavour you're eating, but I haven't seen one more than 180.

The price depends, but I can find the yogurts anywhere from $.97 to $1.55, so they can be more expensive than Silk sometimes. I prefer this company because the taste is better, you get real chunks of the fruit they use in the yogurt (but it's not overpowering -- I don't like chunky yogurt, EW), and it just tastes healthier. They have a variety of flavours - key lime (don't recommend that one - go to Silk for key lime), blueberry, raspberry, strawberry, strawberry & banana, wild berry, cherry.

Product Review: Tofutti's 'Yours Truly' Cones

As a vegan, I usually get the question, "Wait - you can't have [x] right?" And I am usually met with surprised looks when I reveal to 'normal' eaters that vegans can have almost anything that others can -- as long as it's modified a bit.

I have even met vegans that are unaware of the guilty pleasures we can still indulge in - all while being slaughter-free!

One of my favourite ice cream treats are Tofutti's Yours Truly ice cream cones.

I recently went to my health food store to do a shopping run, and I was pleased to find that Tofutti has given a little more variety to their flavours. The options (that I'm aware of) are a vanilla cone with a chocolate topping (like seen above), a vanilla cone with a carmel filling and chocolate topping, and the above chocolate cone with a chocolate syrup filling and chocolate topping.

The cones are around five inches tall and thin, but they're light, fluffy, and filling! Not to mention taste lovely. They're 100% vegan and you should be able to buy them at any health food store near you; Whole Foods should definitely have them and your local health food stores, but I'm not positive to Trader Joe's as they often cater to vegetarians and regular ice cream meets that criteria. Otherwise, Tofutti has a list on their website of stores that should carry their product [here]. My health food store sells them for $5.99 but also offers a 20% off coupon on the entire purchase - so really, I only ended up paying about $4.79.

Try looking on couponclipper.com to see what stores you have in your area and to see if they offer coupons.

Tofutti is a very reputable vegan-friendly company and their website is really fun! They've got listings for different recipes that I plan to try out and will, of course, post. If there are any questions, feel free to contact me and ask away!
